Reland of iOS: Use JSON for GN configuration instead of MB + remove symbols

Reason for revert:
MB is now updated to handle spaces in the buildername properly, something that
only affected our commit bots (not trybots).

WebRTC is a free, open software project that provides browsers and mobile applications with Real-Time Communications (RTC) capabilities via simple APIs. The WebRTC components have been optimized to best serve this purpose.
