Simplify WaitUntil assertions in tests Replace EXPECT_THAT(WaitUntil(..., IsTrue()), IsRtcOk()) with EXPECT_TRUE(WaitUntil(...)) for simplicity. Also fix compilation errors by explicitly converting optional and scoped_refptr to bool in lambdas.
